Recipes Ready for Relaxation

Are you ready to socialise again, (socially distancing of course) but worried that you have forgotten how? Does entertaining fill you with dread or are you just looking for a little inspiration?

We thought a few quick healthy recipes could help you re-enter your social life with ease, glamour, and a little bit of fun. All of these can be made in advance and can be used for casual drinks or a dinner party, leaving you with more time to enjoy your friends.

Green Gazpacho

This beautiful, vibrant, healthy green gazpacho, looks amazing and complicated but is really easy to make, what's more, you can make in advance so it's ready to serve when your guests arrive. You will need:

Ingredients:

100g spinach, 2 garlic cloves, 1 large de-seeded cucumber, 1/2 green chili, 1 avocado, 4 spring onions, 200g yoghurt, 2 tablespoons wine vinegar, a handful each of basil, mint and parsley and 2 x Britt's Superfoods wheatgrass juice sachets.

Simply Blitz all of the ingredients together in a blender, adding water to get the right consistency. Pass through a fine sieve or muslin for a couple of hours and refrigerate. Garnish as you wish, we used flower ice cubes and edible flowers.

Flamiche

To follow the green gazpacho how about a healthy flamiche, this goes really well with a cool glass of our Ginger and Tumeric juice. 

Ingredients:

Shortcrust pastry, vegetables of your choice, we used mushrooms and asparagus, 3 eggs a handful of cheese, and seasoning.

Simply roll your pastry and bake blind for about 15 mins at 180 degrees, then scatter your vegetables on the base, whisk the 3 eggs with a splash of milk and pour over the vegetables. Sprinkle some cheese on top and bake for about 25 mins, until firm to touch and slightly browning.

 

Summer salad

To accompany the flamiche what could be better or prettier than a summer flower salad. Simply wash some salad leaves, sprinkle with washed edible flower petals and add a show-stopping stuffed flower or two. We used nasturtiums and simply added some cream cheese into the petals, it takes minutes but looks impressive!

Rose Petal ice-cream

 

No social gathering would be complete without a dessert and whilst this isn't that quick to make, it can be done in advance, making entertaining easier. We have accompanied this gorgeous pud with an elegant glass of our Elixir juice mixed with apple juice. 

Ingredients:

100g pistachio, 5 egg yolks,10 fl oz double cream, 20 fl oz milk, 2.5oz caster sugar, rose water and rose petals.

To start grind the pistachio and add to the milk with the rose petal, simmer for about 5 minutes and then leave to infuse for a couple of hours. Then strain the mix and reheat to just below the boil, mix the egg yolks and sugar until light and fluffy and then pour the warmed mixture over the eggs, mixing all of the time. Pour the whole mix back into the saucepan and heat, stirring all of the time until thick enough to coat the back of a spoon. At this stage, you can add rose water if you prefer a stronger rose flavour. Once cooled add to an ice cream make and churn, it can then be left in the freezer until your guests arrive. Garnish with some sugared petals and enjoy.
