Fabulous Festive Feasting

The most wonderful time of the year often involves lots of merry making, eating and entertaining. Whilst a little indulgence is fine, making a few healthy decisions can make a big difference.

Christmas should be a time for joy and celebration, so take the stress out of entertaining this year by following these simple and healthy recipes.

Christmas pudding energy balls

These are filled with traditional warm spices like cinnamon, allspice, cocoa, and a touch of orange then sweetened with dates and raisins. A perfect sweet Christmas snack to share or to keep your energy levels high during the season.

You will need:

  • 1 sachet Britt’s Superfoods Elixir Vitality juice
  • 80 g almonds
  • 100 g pitted dates
  • 100g cashew nuts
  • 130 g dried cranberry
  • Zest and juice of an orange
  • ½ tsp ground cinnamon
  • 1 tsp nutmeg
  • 1 tsp ground mixed spice
  • 1 tablespoon cocoa powder
  • White chocolate for topping

Blend all the ingredients in a blender to form a paste except the chocolate. Form into small balls and leave in the fridge for 30 minutes to set.

Melt chocolate and drizzle over balls, decorate with small cranberry and pumpkin seeds to represent the holly and berry.

Brussel sprout burgers

These tasty snacks form one of your five a day and once you have tried them you will never think of Brussel Sprouts in the same way again.

You will need:

  • Brussel sprouts
  • Baby tomatoes
  • Cheese of your choice (mozzarella, brie and stilton work well)
  • 1 sachet of Britt's Superfoods wheatgrass juice
  • A handful of pine nuts
  • 1 garlic clove and cream cheese.

Start by making your wheatgrass pesto. Mix wheatgrass juice with toasted pine nuts, garlic, and blitz until smooth. Add to a little cream cheese until you have a smooth paste.

In the meantime, half the Brussel sprouts and place them in the oven with a little olive oil until they are roasted for about 15 minutes. When cool paste together with wheatgrass pesto, cheese, and tomato into a mini burger.

Xmas vegan rolls

  • Easy to pass around and easy to eat, especially when you know they are a healthier option!

You will need:
Vegan puff pastry
• 1 onion
• 3 cloves minced garlic
• 5 cups mushrooms
• 2 tablespoons chopped parsley
• 1 cup cashew nuts
1 cup dried cranberries
2 tablespoons nutritional yeast
• Seeds for garnish

For the dip:
• Sour cream
• Britt’s Superfoods Organic Wheatgrass Juice
• Pesto

Cook the mushroom-onion-cashew mixture then let it cool. Spoon into the centre of a roll of vegan puff pastry and roll the pastry into a sausage shape. Brush with vegan butter, cut into bite sized pieces and bake in the oven until golden.

Mix one sachet of Britt’s Superfoods Wheatgrass juice with 4tablespoons of sour cream and 1 tablespoon of pesto.

 

Santa’s stuffed peppers

These healthy stuffed peppers make the perfect Christmas eve snack. Tasty, attractive and easy to make they are a great crowd pleaser.

You will need:
Mini peppers
Cream cheese
Herbs - we used basil, mint and coriander
1 sachet Britt's superfoods ginger, turmeric and apple juice

Slice the peppers in half and remove the seeds. Place in a frying pan and soften slightly, then remove to cool.
Mix cream cheese, chopped herbs and superfoods juice and when peppers are cool fill with cream cheese mixture.

Xmas tree Focaccia 🎄

Looking for something that all the family can enjoy, why not make a seasonal Focaccia. Simple to make and fun to do. This was decorated with green beans, rosemary, cranberries, and pepper to make a Christmas tree.



You will need:
1 tablespoon honey
2 cups warm water
1 tablespoon active dry yeast
1 tablespoon salt
1 tablespoon extra-virgin olive oil
5 cups all-purpose flour, or as needed

Add yeast to warm water and leave to bubble for about ten minutes. Then add yeast mixture to flour and salt and mix together. Knead for about 5 minutes and then leave in a bowl greased with olive oil for about an hour. Remove from bowl and place on a baking sheet, cover and leave to rise for a further hour.

Decorate as you wish sprinkle with some olive oil and bake for about 12 minutes until golden brown.

Serve with a wheatgrass juice superfood smoothy and enjoy.

Brussel Sprout Salad
As great way to eat Brussels. Packed with nutrients and flavour, this easy to prepare dish is one we are sure you will enjoy.

You will need:
1/2 lemon ( squeezed)
2 tablespoons Dijon mustard
2 shallots( minced)
2 garlic cloves( minced)
2 handfuls of kale
big handful of Brussels sprouts
handful of almonds
2 tablespoons grated Pecorino cheese
1/2 cup olive oil
1 sachet Britt's Superfoods organic wheatgrass juice
Start by mixing shallots, garlic, lemon juice, olive oil , mustard and wheatgrass juice and allow to infuse.
Remove kale from stalks and chop finely, also chop Brussels sprouts finely. Add a tiny bit of olive oil to pan and toast almonds, watching carefully (takes about a minute). Remove from pan and add salt to the nuts.

Hummus and Tabbouleh Wreath
This dish tastes as good as it looks and can be made in advance, which is great when entertaining.

 

You will need:
• I tin of chickpeas
• 2 garlic cloves
• 2-3 tablespoons tahini paste
• Juice of 1 lemon
• Olive oil
• Salt
• 1 Britt’s Superfoods wheatgrass juice sachet
• Big bunch parsley
• Big bunch mint
• 1 cup bulgur wheat
• ½ cucumber
• Handful of tomatoes
• Juice of 2 limes
• 2 teaspoons ground cumin
• 1 red pepper.
• Pitta bread

Start by cooking the chickpeas, even tinned chickpeas benefit from 15 mins in a pan. Once cooled remove any skins that are loose from the chickpeas, then add to a blender with garlic, tahini and lemon juice and blitz. If you find you are not getting a smooth consistency add a little water, little by little. Add ground cumin and finish with a little olive oil. This can then be left in the fridge for a couple of days until needed. For the tabbouleh cover bulgur wheat with boiling water and allow to absorb (about 15 mins).
Meanwhile chop parsley, mint, cucumber, garlic and tomato into small chunks, when wheat is soft, drain well and squeeze out any extra moisture, add to the chopped mix and squeeze lime juice and wheatgrass juice into the mix, season to taste.

Christmas cheer

This simply and fun take on an egg nog smoothie is brimming with goodness without the guilt!



You will need:
2 cups almond milk
1 frozen banana
1 sachet Britt's Superfoods Elixir vitality Juice
Nutmeg and cinnamon to taste.

Simply blend all ingredients together, decorate with a cinnamon stick and enjoy.

You will need:
1 sachet Britt's Superfoods beetroot and maqui juice
Ginger ale
Cranberry juice

Simply mix them together in the quantities that you prefer and enjoy!
