Why Barley Grass and Matcha?

Ingredients:

  • 2 Organic Barley Grass Sachets

  • 15 large dates, pitted

  • 1/2 cup raw cashews

  • A drizzle of runny honey (to taste)

Instructions:

Step 1: Prep the Dates

Begin by soaking the dates in warm water for about 5 minutes to soften them. This makes blending easier. Once softened, drain the water and set the dates aside.

Step 2: Blend the Ingredients

In a food processor, combine the dates, raw cashews, ground oats, melted coconut oil, organic barley grass sachets, and matcha powder. Blend until the mixture forms a sticky, dough-like consistency. If it’s too dry, add a touch of honey or coconut oil to help bind it together.

Step 3: Form the Bites

Roll the mixture into small, bite-sized balls using your hands. If the dough feels too crumbly, add a little more coconut oil or honey until it holds together. Place the balls on a tray lined with parchment paper.

Step 4: Add the Drizzle (Optional)

For an indulgent touch, melt some white chocolate and drizzle it over the energy bites. For an extra creamy finish, add a small spoonful of yoghurt as well.

Step 5: Chill & Serve

Pop the energy bites into the fridge for about 30 minutes to set. This helps them firm up and makes them easier to handle. Once chilled, they’re ready to enjoy!
